Get ready to dive into the World’s Best Restaurant of 2019, Mirazur roughly translates as -look at the blue, suggesting a serene view over the water. It certainly has one. The restaurant sits at the foot of some pretty dramatic mountains, surrounded by their own gardens with dozens of types of fruits, vegetables, herbs, citrus trees and more that end up on your table. They’re a wonderful personification of that mix of genuine warmth and utter professionalism.

Through his personal interpretations of ingredients and flavour combinations, chef Mauro Colagreco has created a style of his own. He has absorbed his Italian-Argentinian cultural heritage and that of the chefs with whom he trained. Therefore now follows his creativity as he draws on the local culture on both sides of the border. Inspired by the sea, the mountains and the fruit and vegetables grown in his own gardens, Mauro invents colourful, pictorial dishes that play with textures and bold contrasts.

Breathtaking views of the French Riviera, three levels of green vegetable gardens is the beginning. A team of amazingly talented cooks and front house staff combine to make Mirazur the ultimate restaurant experience. Above all, Its’s unique cuisine is inspired by the sea, the mountains and the restaurant’s own gardens, including Menton’s fresh citrus fruits.

Mind-Blowing Dishes 

The food right from its taste to visual appeal to its attractive plating and colour palette will be etched in your hearts forever. On the other hand, the taste is heavenly. Highlights from Mirazur’s tasting menu include salt-crusted beetroot from the garden with caviar cream, eggs from the chicken with smoked eel and hazelnuts and potatoes with melting egg and white truffle.

 

 

Restaurant’s signature dishes

According to the World’s 50 Best websites, anchovies with fried skeletons and lemons; oysters with tapioca, shallot cream, and pear; and salt-crusted beetroot with caviar cream. All are inspired by the three themes that apparently guide the restaurant- sea, garden, and mountain. These dishes are exclusively made by their best chefs.

 

 

In conclusion, it’s fair to say that 2019 is chef Mauro Colagreco’s year. Mirazur reaches The World’s 50 Best Restaurants list since it’s opening in 2009. Mirazur celebrates 10 years in the ranking by rising to No-1.  In addition, this feat coincides with the restaurant achieving the valued three Michelin stars. Meanwhile, a three-year renovation project involving a new dining room, new vegetable gardens are it’s future plans.

However, following this diet certainly has some strong drawbacks. Many people following this diet develop certain deficiencies.  Those following a vegan diet may want to be extra careful to ensure they are consuming enough iron, zinc, vitamin D, calcium, and omega-3 fatty acids. Vegans are also at a high risk of developing a Vitamin-B12 deficiency. Also, following a vegan diet can be unsustainable for some individuals. It’s not a very pocket-friendly diet.
