Chutney is a side dish among the cuisines of the Indian subcontinent that can be made from tomato, tamarind, coriander, mint, ground peanut, yoghurt etc. chutneys that contrast in taste can be served together – a favorite combination may be a green coriander or mint and tamarind chutney. It’s important to know that while making chutneys spices are added usually in a particular order for better consistency and taste. In south India they are also made in the form of powders and are made from roasted dried lentils. These powders are generally used for sprinkling on idlis and dosas.

Cumin 

Cumin seeds have a distinct earthy and aromatic flavor and can be a tad bitter. Also, it imparts a nutty tinge to any dish. It is commonly used for tempering curries and vegetables. Most North Indian curries start off with a tempering of cumin seeds in hot oil just like this jeera rice recipe.
