Carrot Cake In A Mug

Mug cakes are great when you’re craving a fast individual sweet indulgence. A lot of people carrots as they are an excellent source of provitamin A, containing the precursor to vitamin A in the form of carotenoids. One medium-sized carrot (about 75g) is said to give you a whopping 210% of your daily recommended intake of vitamin A. Moreover, Carrots (of all varieties) contain very helpful levels of antioxidants, each with their own unique protective function. So get ready to satisfy your sweet tooth and keep your calorie intake in check with this quick carrot cake in a mug recipe.

Ingredients

  • 4 tbsp – Flour
  • 2 tbsp – Sugar
  • ⅛ tsp – Baking powder
  • ¼ tsp – Cinnamon powder
  • A pinch of nutmeg powder
  • A pinch of salt
  • 1 tbsp – Refined oil
  • 2 tbsp – Milk
  • 2 tbsp – Grated carrots
  • 1 tbsp – Chopped walnuts
  • 1 tbsp – Cream cheese (Recipe Below)
  • 1 tbsp – Honey

Directions

Take a microwave-safe mug and add all the dry ingredients — all-purpose flour, nutmeg powder, cinnamon powder, baking powder along with salt — as per the measurements mentioned above.

Mix them using a fork. Then add refined oil along with milk and mix. Once mixed, add the star ingredient — 2 tablespoons of grated carrot. You can add half a tablespoon extra if you want the flavour to be prominent.

For a nutty flavour, add walnuts. Mix to combine everything and then place the mug in a microwave for 1 minute.

Now, take 1 tbsp cream cheese and add 1 tbsp honey to it. Mix nicely and spread it on the cake.

Cream Cheese For Carrot Cake 

Don’t buy cream cheese when you can make it especially home.

Ingredients

  • 1 tsp vanilla essence
  • 2 cups of fresh cream
  • 2 cups of full-fat milk
  • ½ tsp salt
  • 4 tablespoons of lemon juice

Directions

  • Take a heavy bottom saucepan.
  • Pour 2 cups of milk and add 2 cups of fresh cream too. Make sure the milk is of the full-fat variant.
  • Keep the flame on medium and add a pinch of salt to it.
  • Keep stirring it continuously so that the milk and the cream mixture do not burn.
  • When it starts boiling, add 4 tablespoons of lemon juice and keep stirring until the milk curdles. Add a tablespoon of white vinegar, this gives it the sour taste cheese is known for.
  • Set a glass bowl with a sieve, put a muslin cloth on top of the sieve and pour the curdled mixture, and just let it stay undisturbed for at least 15 minutes.
  • Using a grinder, grind it for 2-3 minutes. If you think the mixture is getting harder, add a tablespoon of leftover liquid to it. Once, ground the mixture becomes into a soft creamy texture.
  • Transfer it into a bowl and let it set in the refrigerator for 30 minutes.
  • Mix it with chilli oil or oregano spread it on your bread and enjoy!

Pizza is one of the world’s most popular foods. There’s a reason pizza is so popular. Humans are drawn to foods that are fatty, sweet, rich and complex. Pizza has all of these components. Cheese is fatty, meat toppings tend to be rich and the sauce is sweet.

Pizza toppings are also packed with a compound called glutamate, which can be found in the tomatoes, cheese, pepperoni and sausage. When glutamate hits our tongues, it tells our brains to get excited — and to crave more of it. This compound actually causes our mouths to water in anticipation of the next bite.

Then there are the combinations of ingredients. Cheese and tomato sauce are like a perfect pairing. On their own, they taste pretty good. But according to culinary scientists, they contain flavor compounds that taste even better when eaten together.

The Chemistry Behind It

Another quality of pizza that makes it so delicious: Its ingredients become brown while cooking in the oven. Foods turn brown and crispy when we cook them because of two chemical reactions.

The first is called caramelization, which happens when the sugars in a food become brown. Most foods contain at least some sugar; once foods are between 230 degrees and 320 degrees, their sugars begin to turn brown. Caramel is made from several thousand compounds, making it one of the most complex food products. On a pizza, ingredients such as onions and tomatoes become caramelized during baking, making them rich, sweet and flavorful. That brown and crispy crust is also the result of the dough caramelizing.

The Maillard reaction occurs when the amino acids in high-protein foods such as cheese and pepperoni react with the sugars in those foods when heated. Pepperoni that becomes crispy with curled edges, and cheese that browns and bubbles, are examples of the Maillard reaction. With bread, cheese and tomato sauce as its base, pizza might seem like a simple food. It isn’t. And the next time you’re about to devour a slice, you’ll be able to appreciate all of the elements of pizza that excite our brains, thrill our taste buds and cause our mouths to water.

Although you probably won’t be out on the streets hustling for a stuffed crust pepperoni, a recent study has found that pizza has some very addictive properties.

The University of Michigan study, published in the US National Library of Medicine, examined which foods caused people to display addictive tendencies. Using a sample of 504 students, the study found that pizza came out on top (perhaps unsurprisingly).

According to the study, the highly processed foods loaded with sugars and fats can cause changes in the dopamine system – involved in reward and pleasure – akin to drug abuse.

They also pointed to another study that showed that “rats maintained on a diet of highly processed foods, such as cheesecake, exhibit downregulation in the dopamine system that also occurs in response to drugs of abuse.”

The other reason why pizza seems to be so addictive might be even simpler: cheese.

The crave-inducing properties of cheese come from an ingredient called casein, a protein found in all milk products. When we digest this protein, it releases casomorphins which stimulate opioid receptors, the receptors involved in pain control, reward and addiction.

So, while this might not make you feel better when you covered in crust crumbs embarking on a pizza come down, at least you know the science behind your addiction.

Looking for a new reason to cut down on junk food? Besides the obvious health-related benefits, there’s a recent study that junk food makes up a significant proportion of food-related environmental impacts. It was found that for each household, a massive portion that is to say almost 33-39% of water use, energy use, greenhouse gas emissions and land use went into junk food.

The fast-food industry are catastrophically affecting global warming. Given its high dependence on natural resources such as water, land and feed for livestock, the animal agriculture involved in creating fast food products is a sizable contributor to environmental issues.

What exactly are the criteria for the classification of food? Well. food items and drinks not necessary to provide the nutrients with the body needs, but that may add variety. Many of these are high in saturated fats, sugars, salt and/or alcohol. By contrast, it is a list of those food items which does not belong to the core food groups. Fruits, vegetables, cereals, legumes, nuts and seeds, dairy and unprocessed meat constitute the core food group.

We all are by now aware of the fires that were intended at increasing grasslands for the beef industry. Why not cut down on meat and eat more of non-processed local green food? Think about it.

The solution should ultimately tackle the heart of the problem, which is why we over-consume these foods in the first place. Encouraging dietary shifts away from junk foods is challenging because of their cheapness, taste and convenience. Junk food is also promoted to consumers for profit. Food producers should ultimately be held responsible for the proliferation of cheap junk food. We need to encourage divestment away from unhealthy, unsustainable products. It should be through regulation and public pressure, following the example of measures to address climate change.

Tuna is the go-to fish. If you have grown in a household where fish was a major seafood special, it was always in the fridge. It never disappoints – it is pocket friendly, can be carried on trips and picnics and the taste is delish! Let’s not forget its nutritional value – it is a great source of selenium, vitamin B3, vitamin B12, and omega-3 fatty acids.

The versatility with which it can be eaten is unparalleled.  Tuna sandwiches, tuna patties, tuna sabji, tuna salad – and so much more! Okay, a fun fact – it comes in canned packs but it is, in fact, a large fish, which weighs almost 550 pounds! It is undoubtedly not your basic seafood, but a quintessential fish. If you believe you are a diet person and salad is the only go-to meal, trick yourself! Voila, here’s a tuna salad for you that you can make using celery, onion, parsley, mayonnaise, mustard, pepper, and lemon juice. You can either eat it like a regular salad or like a sandwich dressing.

Tuna noodle salad 🥗 For those times when you wanna be healthy but you also love carbs Ingredients for marinade: – 2 tuna steaks – 1 tsp garlic powder – 1 tsp chilli flakes – 1 tsp ginger paste – 1 tbsp light soy – 1 tbsp dark soy – 0.5 tbsp mirin – 1 tsp sesame oil Mix all together and marinade for 2 hours to overnight. Other ingredients: – 1 cup sliced cabbage – 0.5 onion sliced – 1 tbsp fish sauce – 1 tbsp light soy – 1 cup jalapeño – 1 sheet nori Ok let’s get started! Begin by searing off the marinated tuna steaks in hot oil while you boil some beansprouts in a separate pot. Add some high quality ramen noodles to the beansprouts whilst you carry on searing the tuna! Once the tuna is beautifully caramelised, remove them from your hot pan and replace them with the sliced cabbage and onion! After this, grate in the zest of a lime before squeezing in the juice! At this stage, you can pull your noodles and beansprouts out of their pot and add them to the vegetables along with a little cooking water. When the ingredients are all mixed together well, pour in the remainder of the marinade and season with extra soy and fish sauce to taste!
